Bell Pepper and Keilbasa Breakfast Hash


This is our breakfast of choice on mornings when we are all home and can enjoy breakfast together as a family. This is also a great choice for when you're having breakfast guests, as this can easily be doubled or tripled and feed a large crowd with very little effort. I like to serve this with scrambled or sunny side up eggs, and lots of freshly chopped herbs and Thai peppers from the garden on the side. I hope you give this recipe a shot, and enjoy!

Bell Pepper and Keilbasa Breakfast Hash

Serves 4-6

Ingredients:

1 lb bag Southern Style hash browns

1 14 oz package Polish Keilbasa, or sausage of choice, sliced

2 bell peppers, diced

1/4 cup olive oil

1 teaspoon salt

1/2 teaspoon ground black pepper

Pinch of cayenne pepper

Chopped fresh parsley and chives, for garnish

Directions:

1. Preheat oven to 400 degrees F. Into a large cast iron or rimmed baking tray, add the hash browns with the olive oil, salt, pepper and cayenne pepper. Mix, then bake in preheated oven for 10 minutes, mixing once.

2. After 10 minutes, add in the keilbasa and diced peppers. Cook another 15 - 20 minutes, mixing two or three times, until potatoes have turned golden brown.

3. Garnish with chopped parsley and chives, and serve with eggs, if desired. Enjoy.
