Maple Cinnamon Granola


It's only August but I'd be lying if I said I wasn't thinking about wearing sweaters and drinking hot cocoa already. My favorite time of year is so close and it's got me thinking fall flavors, like cinnamon, nutmeg and maple.

I made this granola with some of these flavors and have been enjoying it for weeks, as it keeps so well in an air-tight container.This would also make a great gift for your friends and family. I hope you give this a try! Enjoy.

Maple Cinnamon Granola

14-16 servings

Ingredients:

2 cups old fashioned oats

1 cup pecans (whole or roughly chopped)

1 cup almonds (whole or roughly chopped)

1/4 cup maple syrup

1/4 cup coconut oil

2/3 cup brown sugar

2 teaspoons vanilla extract

1/4 teaspoon salt

1 1/2 teaspoon cinnamon

Directions:

1. Preheat oven to 300 degrees F. Line a large baking sheet with parchment paper; set aside.

2. In a large bowl, mix together the old fashioned oats, pecans and almonds. Set aside.

3. In a medium saucepan over medium heat, add the maple syrup, coconut oil, brown sugar, vanilla extract, salt and cinnamon. Cook, stirring occasionally, until all the sugar has dissolved. Pour this into the bowl of oats and nuts mixture and stir until all contents are evenly coated with the maple syrup mixture.

4. Spread the mixture onto the lined baking sheet and bake for 15 minutes. Let it cool completely and store in an air-tight container. Enjoy.
