Apricot Maple Ice Cream




Summer days are lazily lolling by, taking us into the hottest of summer's months. This season provides more fruits than most seasons, so when my husband's family passed on a bucket of apricots from their backyard, I set to work. I made jam, I baked some muffins, and I froze some for future projects.
This ice cream has the slightest hint of maple flavor, not too sweet and a darling little dessert on a hot summer day. I hope you give it a try. Enjoy!


Apricot Maple Ice Cream
Serves 8
Ingredients:
4 cups chopped frozen apricots
1 tablespoon vanilla extract
3/4 cup heavy whipping cream
1/4 cup sweetened condensed milk
1/4 cup plus 2 tablespoons maple syrup
1/2 teaspoon salt
Directions:
1. Add the chopped frozen apricots to a blender or a food processor. Blend until smooth. You may have to do this in batches, depending on the size of the machine you are using.
2. Add all remaining ingredients and blend until smooth. Place into a container and shut tightly with a lid. Freeze for at least 2 hours. Enjoy.
