Radish Butter
This is a very simple recipe, but one that I enjoyed so much! Because this recipe has so few ingredients, I made sure to choose the very best. I truly don't think you would be able to get the same experience without using the freshest bread and the best butter. Fresh radishes and dill with the freshly cracked black pepper is so excellent, but the butter is the star of the show, really, so I chose butter made with milk from grass fed cows. Smeared on french bread that's been lightly toasted, this was a simple but true treat. I hope you give this one a try, even if it might be a little outside your comfort zone.
Radish Butter
Makes approximately 1 1/2 cup
Ingredients:
8 tablespoons good quality butter (grass fed), room temperature
1/4 cup radishes, finely diced
1 - 2 small shallots, finely diced
1 1/2 tablespoons fresh chopped dill, plus extra for garnish
1/2 teaspoon freshly cracked black pepper
Salt, to taste
Chopped chives, for garnish
Thinly sliced radishes, for garnish
Fresh bread, for serving
NOTE: Because this recipe consists of so little, it is important to get the highest possible quality ingredients.
Directions:
1. In a bowl, combine the room temperature butter, radishes, shallots, dill and cracked pepper.
2. Taste for salt. Depending on the saltiness of your butter, add as needed. Smear on fresh bread or crackers, top with sliced radishes, chives, dill and more cracked black pepper, if desired. Enjoy.
