Cottage Cheese Broccoli Bake

This simple recipe is one I threw together one afternoon when I had limited ingredients and needed to use up a container of cottage cheese. It took no time at all and as I was eating it, I thought, as I often do, "I could add some grilled chicken to this and call it a meal". But even without the chicken, this was a delicious light lunch that was so quick to make. Best eaten fresh and preferably with a crust of bread. Enjoy!

Cottage Cheese Broccoli Bake
Serves 9
Ingredients:
4 heaping cups broccoli florets
2 eggs
1 16 oz. container cottage cheese
1/2 white or yellow onion, finely diced
1/2 cup plus 2 tablespoons Parmesan cheese, divided
1 cup plus 1/4 cup mozzarella cheese, divided
1 teaspoon salt
1 teaspoon onion powder
Chives or green onion, for garnish
Directions:
1. Butter an 8 inch X 8 inch baking dish, set aside. Preheat oven to 350 degrees F.
2. Fill a large pot with water and bring to a boil. Add the broccoli and boil for 2-3 minutes, until slightly tender and bright green but still crisp. Drain well.
3. To a large bowl, add the eggs, cottage cheese, onion, 1/2 cup Parmesan cheese, 1 cup mozzarella cheese, salt and onion powder. Mix thoroughly. Add in the broccoli and mix until incorporated.
4. Pour mixture into prepared baking dish. Top with remaining 2 tablespoons Parmesan cheese and 1/4 cup mozzarella cheese. Bake for 15-20 minutes, until light golden brown and bubbling around the edges. Garnish with thinly sliced chives or green onions, if desired, and cool slightly before serving. Enjoy.
