Waldorf Salad


This is my take on the widely known and loved Waldorf Salad. This is something I often make and keep in my refrigerator as a quick meal or snack. In our family we especially love eating this salad on a fluffy, buttery croissant roll, but it's also yummy with crackers or even on it's own. Feel free to add your own twist on it; many people add grapes, or half mayonnaise-half yogurt, and even a splash of orange juice. This was my way of using up leftover oven roasted chicken, but you can also use leftover turkey and it'll be just as delicious. Enjoy!

Waldorf Salad

8-10 servings

Ingredients for Salad:

Meat of 1 whole rotisserie chicken, roughly chopped*

Half stalk of celery, chopped

2 apples, chopped

1 cup cranberries (more per preference)

1 1/2 cup walnuts, chopped

For Dressing:

1 cup mayonnaise

Juice of 1/2 lemon

1 teaspoon salt

1 teaspoon pepper

Directions:

1. In a small bowl, combine all dressing ingredients until well mixed. Combine all salad ingredients in a large bowl, then add the dressing. Taste for seasoning, and add more lemon juice or salt and pepper as desired.

* This will also work for all chicken breast or all chicken thigh instead of rotisserie chicken meat. Simply poach meat in boiling water until fully cooked, then chop into 1/2 inch pieces.
