Fresh Radish and Fennel Salad
This salad is made of such fresh, energetic ingredients, all fighting for the spotlight but at the same time performing so well together. It's the perfect addition to a grilled steak or a hearty meat sauce on pasta. I was not willing to try fennel for so long because of it's strong licorice flavor, but paired with quick-marinated purple onion and the absinthal bite of the radish I actually quite enjoyed it! Fresh Radish Fennel Salad
6 servings
Ingredients for Salad: (all vegetables to be finely sliced)
1/2 purple onion
1 medium bell pepper
1/2 bulb fennel
1 lb radish
1/2 apple
Ingredients for Dressing:
2 cloves of garlic, finely minced
2 tablespoons red wine vinegar
juice of 1 lemon
3 tablespoons honey
1 1/2 teaspoons salt
Directions:
1. Add all ingredients for the dressing in a large bowl and mix until well incorporated. Add in the sliced purple onion and mix until well coated, then leave out in room temperature for about 15 minutes.
2. Add in the rest of the sliced vegetables and mix well. Taste for salt, add more is desired. Enjoy.
