Pineapple Mango Smoothie Bowls


This recipe is barely a recipe, really. More like an idea for a delicious snack or a quick breakfast. You can omit the sugar and heavy whipping cream if you'd like, but I found the pineapple was a little too tart for me and I didn't want to overpower the honey flavor, so I let a little sugar help it along. The heavy whipping cream gives it a beautiful silky texture. You can switch out the pineapple or mango and add in your favorite fruit, and top with whatever you like! I saved the remaining smoothie mixture in the freezer and have been enjoying as ice cream here and there. It's delicious! I hope you enjoy this recipe. Happy snacking!

Pineapple Mango Smoothie Bowls

6-8 servings

Ingredients:

3 cups (1 lb) frozen pineapple chunks, slightly thawed

1 very ripe mango

1/4 cup granulated sugar

1/2 cup heavy whipping cream

2 tablespoons wild honey

Topping Suggestions:

Honey Greek yogurt

Chopped strawberries

Granola

Honey

Directions:

1. Place the pineapple chunks, mango, sugar, heavy whipping cream and 2 tablespoons of wild honey in the blend. Blend until very smooth (you may need to place mixture into the freezer to thicken slightly after being blended so it doesn't begin to melt quickly).

2. Divide the smoothie mixture between serving bowls, the top with a dollop of greek yogurt. Add strawberries and granola and drizzle a little more wild honey. Enjoy
