Teriyaki Salmon Marinade

The everyday grind of chores, to-do lists and busy agendas can often be overwhelming, and a home-cooked meal is left to throw-together ingredients from the freezer. I don't mean to say a freezer cannot hold valuable ingredients that will make a great meal, but based on personal experience it is oftentimes a meal of preservatives and guilt.

I am always on the lookout for make-ahead meals that can still be nutrient packed. A marinade for meat or fish that can then be thrown on a pan for a quick sear and served up with a salad is perfect. The slight stickiness of this Teriyaki marinade, flavored with soy sauce and brown sugar, sears to crispy perfection and is delicious with a side salad or rice. I hope you enjoy!

Teriyaki Salmon Marinade

Serves 2

Ingredients:

2 pound salmon fillet

2 Teaspoons lemon pepper

2 Teaspoons garlic powder

2 Teaspoons salt

1/3 cup soy sauce

1/3 cup brown sugar

1/3 cup water

1/4 cup vegetable oil

Instructions:

1. Mix well all marinade ingredients in a zip lock bag and add salmon fillets. Marinate in refrigerator for up to 2 hours, but no longer.

2. Lightly oil a large skillet and bring to medium heat. Place salmon fillet in the skillet and cook on one side for 2-5 minutes, depending on size of fish. You should see the thickest part of the fish be halfway cooked through (and become flaky) before flipping it.

3. Flip only once to prevent fish from falling apart and cook for the same amount of time, until cooked through and flaky. Do not overcook. Serve immediately.
